Catching up: 12/6-12/8

We've had a few busy days with not so much cooking. Wednesday 12/6 we went out to dinner at El Centro. Three out of four of us had meat in our meals. I'm interested to know where they source their meats and how it is produced.

On Thursday, I cooked fried rice with beef. We get organic ground beef from Costco, and we already had it in the freezer.

Today, Friday 12/8 was leftover night for the most part. Matt had leftover fried rice, I had leftover black bean soup, Ava had leftover pasta, and Jonah had a Caesar salad and a hard boiled egg.

Crazy Tuesday

Had lunch and dinner out. My lunch was a grass-fed, pastured beef burger. Delicious. Dinner was a salad. Matt and Jonah had meat at dinner, Ava and I did not.

Dinner: Meatless Monday, December 4

Tonight we had Ravioli Soup, which was delicious AND super fast and easy! It took less than 20 minutes to prepare, and EVERYONE loved it. I served it with toasted sourdough bread. 

Verdicts

Everyone loved it. Both kids had seconds and cleaned their bowls twice!

Dinner: Sunday, December 3

Tonight we had fried tofu with rice and spinach. Frying makes everything yummy!

Crispy Glazed Tofu, with the following modifications:

  • I did not make the quinoa salad, I just served it over rice. 
  • I also served the sauce on the side, which was smart because Ava didn't like the sauce. 
  • I cut the sriracha and red pepper flakes because my kids don't do spicy. (Matt and I added red pepper flakes to our own portions.) 
  • Finally, the directions didn't say when to use the 5 spice powder so I didn't end up using it, but it looks like (from the pics on the site) that it's supposed to go in with the panko and flour.

Verdicts

Ava said she liked it, but she only ate a few bites.

Jonah gobbled up about three servings.

Matt and I both liked it.

Food prep: Sunday, December 3

I made seven hard-boiled eggs for the week. 

I'm also making a black bean and corn soup in the slow-cooker. Source is Six O'Clock Scramble, but I saved it into Gathered Table. I'm expecting to eat this for lunches during the week.

I'm planning overnight oats with bananas and peanut butter for breakfasts this week.

Dinner: Saturday, December 2

Tonight I made black beans and rice from Gathered Table, and Matt made some roasted broccoli (no recipe, just olive oil and salt, roasted in the oven for about 30 minutes at 400).

Verdicts

Ava said she liked it, but she only ate a few bites.

Jonah took one bite and nearly gagged. 🙄

Matt and I both liked it and ate a lot.

The kids had hot dogs later in the evening, le sigh.

In which I start a new blog many years later

Hello! This is just a little blog for me to document my attempts to reduce the amount of meat my family and I consume.
